Easy Family Meal Recipes

Food is fuel, providing nutrients to our minds and bodies. Choosing nourishing ingredients to use makes a huge difference to our state of being. Our environment promotes fast and easy options that are cheap and do not require preparation or thought and hardly require any time for clean up.

But many of our choices lead to a poor mental state of mind and promote feelings of anxiety and depression. These states can easily be avoided by making small, healthy choices every day.

Nourishing your family with delicious meals that don’t cost too much, don’t take too long to prepare and provide nutrients to fuel their bodies and minds is a task that is often underrated.

Spend some time now discovering what I wish someone had taught me years ago – a few recipes that are easy, fast, cheap and most importantly, nourishing to the body!

Burrito and Nacho Beef Recipe

Ingredients

  • 4 tablespoons coconut oil or other good-quality fat
  • 2 onion, finely chopped
  • 4 garlic cloves, finely chopped
  • 1kg beef mince
  • 2 teaspoon smoked paprika
  • 2 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 3 tablespoons tomato paste
  • 2 x 400g cans diced tomatoes

Method

  1. Cook the chopped onion and garlic with the oil for 5 minutes on medium heat, until translucent and aromatic.
  2. Add the spices and tomato paste and cook for 1 minute, then mix in the tomatoes and heat for 4 minutes.
  3. Add the beef and cook for 15 minutes or until cooked through. Season with salt and pepper to taste.
  4. Serve as burrito or nacho topping or eat in a bowl with a serve of leafy greens, chopped tomato and avocado. Enjoy!

Butter Chicken Recipe

Ingredients

  • 4 tablespoons coconut oil or other good-quality fat
  • 2 onion, finely chopped
  • 8 garlic cloves, finely chopped
  • 1kg diced chicken thighs
  • 2 teaspoon smoked paprika
  • 2 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 4 teaspoons garam masala
  • 2 teaspoons ground cardamom
  • 2 teaspoons ground ginger
  • 1 teaspoon paprika
  • 2 teaspoons ground turmeric
  • juice from 1 lemon
  • 2 x 400ml cans coconut cream
  • 3 tablespoons tomato paste
  • 4 cups chopped vegetables (eg carrot, zucchini, broccoli, cauliflower, sweet potato)
  • 1 cup chopped coriander leaves

Method

  1. Cook the chopped onion and garlic with the oil for 5 minutes on medium heat, until translucent and aromatic.
  2. Add the chopped vegetables and fry them until soft. TIP: If your child is fussy, chop the vegetables in a food processor until minced and they won’t even notice they are there. I even add broccoli stalks!)
  3. Add the spices and tomato paste and cook for 1 minute, then mix in the tomatoes and heat for 4 minutes.
  4. Add the beef and cook for 15 minutes or until cooked through. Season with salt and pepper to taste.
  5. Serve with rice or cauliflower rice and top with chopped coriander. Enjoy!
